Had a great weekend, how was everyone else's? I made some veggie/turkey lasagna with whole wheat noodles, lowfat ricotta, etc., last week which we ate for most of the week. It was good, but now we're pretty sick of it. Going to make something with eggplant soon, as we picked up a huge one from a lady at work (from her garden). We have healthy, delicious food in the house, so we are definitely eating better :) On the exercise front there has been a whole lot of nothing. I feel like I'm getting sucked into holiday inactivity, which is sometimes bothersome, but sometimes I don't care. Especially when it is raining. Turning on our indoor Christmas lights, Christmas tree, turning on the Christmas carols and wrapping presents or reading a good book with a cup of hot chocolate seems more appealing than getting in an exercise DVD or even dancing (which I love). Snuggling on the couch on a rainy night trumps crunches...
A friend of mine has a saying about exercise, or going to the gym. He says, "you go, you quit, you go, you quit, you go...." The idea being that for most of us we are not going to exercise 1 hour/day every single day for the rest of our lives. We are going to have periods where we stop going to the gym (or working out at home), then ramp back up again. The key, he thinks, is to never truly quit (give up) and to try to keep the "quit" intervals short. Find ways to quickly get back in the groove after getting off track. I can relate to that, but I think my "quit" interval has gotten a little out of hand.

your lasagna sounds a lot like mine:)
last time we made it was on a whim and we did not have ricotta in the house so we used cottage cheese instead. The idea of it grossed me out but Dan said that that was how his mom makes it and it totally worked out! I don't know how it compares number wise to the LF ricotta - but always nice to know of a doable substitution...
What do you make w/ eggplant?
Well, Matt wants to make eggplant lasagna, but we are not going to have time in the next couple of evenings, and it really needs to get cooked soon, before it turns. So, we'll probably do what we always do, which is oven roasted eggplant slices. We slice in 1/4-inch circles, spray both sides with non-stick spray (olive or canola oil), season with salt, pepper and garlic powder on both sides and then put on a low rack in the oven with the broiler turned on (above it). Cook for 5 minutes each side.
They key is to have it pretty far from the actual fire/coils of the broiler so the outside doesn't burn or brown too much while the inside is cooking. If done right it ends up being incredibly creamy on the inside with that roasted flavor. I try to make enough to save, but it seems that no matter how much eggplant I use we end up eating most of it that night!
hmm, I know what you mean about the intervals of exercise..I am wanting to keep track so I can see, out of 30 days, I worked out 20, or whatever the number was, maybe 1....
also I remember hearing one workout therory that it is good to to work out, build up/increase work outs, then to take a break for a week and start again...
for me I am never sure if I feel like I really do a good job of increasing the workouts, instead I just try to sweat and keep it constant..
